2 whole store bought puff pastry crusts
1/2 C Elki Carmelized Sweet Onion & Balsamic Crostini Spread (Alternatives for different lavor profiles: Elki Basil Pesto or the Sundried Tomato & Parmesan Crostini Spread.)
1C Grated Fontina Cheese or Monterey Jack
1/2 C grated Asiago
1C Grated Gruyere or Swiss
4 C Cherry tomatoes, washed and dried, cut in half
salt and pepper to taste.
Handful of basil leaves, chopped
Preheat oven to 425°F.
Roll out puff pastry into one thin crust to fit the bottom and sides of 11x17 baking sheet.
Spread a layer of the Elki Carmelized Onion Crostini Spread.
Mix the three cheeses together layer on top of the spread, then sprinkle the tomatoes over the cheese.
Sprinkle with salt and pepper.
Bake for 15-20 minutes. Allow to sit for 5 minutes and then sprinkle with the chopped basil.
