Mix together in a medium bowl:
Streusel Topping:
4 Tbsp melted butter
1 cup sugar
1 tsp vanilla or almond extract
1 egg
4 oz shredded coconut
Preheat oven to 350 degrees.
In a 8x8 nonstick pan use your favorite shortbread or graham cracker type crust, press firmly into place.
Spread 1 cup of Elki's Scandinavian Lingonberry Spread over the crust and top with the streusel coconut topping as the last layer, bake at 350 degrees for 30 minutes.
Cool, cut into small squares and serve.
