1 Cup cashews, soaked in water for 1-5 hours, and then rinsed The juice of two limes
1/2 cup olive oil
1/2 cup water
1/4 cup apple cider vinegar
2-4 garlic cloves, depending on the depth of garlic flavor you like
A generous inch of salt
2 cups cilantro, packed
1-2 jalapenos
Serve with ELKI salsa and your favorite corn chips
Place all of the ingredients except the cilantro in a blender, and blend until smooth. Add cilantro and blend until desired consistency is reached. Taste to adjust the seasoning and heat from the jalapeno. Refrigerate until chilled.
Dressing will thicken in the refrigerator. To loosen the dressing, add a tablespoon of almond milk or water until desired pouring consistency.
