Asparagus Pesto Pasta SaladELKI Customer |
1 lb. asparagus
1 lb. penne or other pasta
1 9.9oz jar Elki Asparagus Pesto
salt and pepper
1/3 cup pine nuts (lightly toasted)
Snap off the tough ends of the asparagus, Bring a large pot of water to a boil and add the asparagus spears. Cook until tender, about 4 minutes. Lift the asparagus out of the pot and set aside to cool slightly. Bring the same water back to a boil. Add a dash of salt and add pasta. Cook until the pasta is al dente. Drain and rinse the pasta with cool water. Put into a serving bowl.
Cut up the asparagus spears into about 1" pieces and add to bowl with pasta. Toss in Elki's Asparagus Pesto. Season with salt and pepper to taste. Garnish with pine nuts. |
